4 C milk
3/4 t salt
1 C grits
8 oz shredded gruyere (2 cups)
1/8 C butter
1/4 t pepper
Combine milk & salt in pan, cook over med-high until just starts to boil. whisk in grits. reduce heat & simmer uncovered 20-25 mins or until thick stirring often. Remove from heat, add cheese, butter, pepper.
